@Mario. If I ever try to do something like this it doesn't work at all. As usual, I was just noodling around and suddenly something clicked. @bvdp I didn't use a wind controller. It's multiple passes on a keyboard into Yoshimi soft-synth. I got the choppy swirly sound that runs through from the start by linking a couple of LFOs and a filter to the modulation wheel.
