By now I expect you know I'm quite easily confused by the 'important things of life'(tm).

Well, here's another one.

I'm rather partial to marmalade on toast. No scrub that, I'm very partial to it. So, yesterday I opened a new jar. I do this very carefully, as I'd hate to waste even a smidgen. However, this morning when I picked up the jar it was sticky.

How does that happen? Every time I open a jar it seems to immediately get some of the stuff on the outside. It doesn't matter what I do to stop it, spoon instead of knife, paper towel round the jar. Nothing helps.

The best theory I can come up with is that the jar is actually slightly porous to marmalade, but as long as it has the vacuum seal, air pressure stops any seeping through. Open the jar and bingo! Air pressure is equalised and the marmalade can get out.

If you know better, I'd be interested to hear your explanation.
